This Chocotech Sucromaster® is used for the production of Hard Candies especially designed for Sugar and sugar-free masses, Milk hard caramels, laminated hard caramels, Medical hard candies, Aerated Hard Candies etc. Here the process consist of cooking, vacuuming, screw extraction of the mass, dynamic mixing, tempering and aerating where the high vacuum system guarantees low inversion and minimal aroma loss due to the low temperature of the mass.
